When the cell walls of garlic cloves are damaged, a chemical reaction occurs involving two key components: alliin and alliinase. This interaction results in the formation of allyl sulfenic acid and an unstable compound that quickly degrades. The remaining allyl sulfenic acid molecules then combine to create a new compound called allicin.
